Bakers are listening to consumers concerns of health eating. Nutrients are part of this trend of a healthier life. Such as protein powders and other fortifications. Plant-forward ingredients and heirloom grains such as spelt, chickpeas, einkorn, quinoa, chia and barley offer ways to formulate with the addition of more protein and fiber.
