Orange Blossoms… Cake

In my early years in Florida, we used to drive down the turnpike in the spring with the windows of the yellow station wagon rolled all the way down. I loved the aroma of the orange blossoms and stopping at service centers between the North and South bound lanes. My siblings and I would do a little more than stretch our legs. We would play a quick game of tag, then run into the Welcome Center for a cup of cold and sweet orange juice. Back then it was free (“complimentary”)! Cold and sweet! So comforting in the Florida heat.

Typically you can just incorporate orange blossom water or orange flavor create a wonderful orange blossom cakes, orange blossom mini cupcakes, and orange blossom cakes made with orange flavor and a hint of orange blossom water. These are moist and fluffy. Start with some eggs, sugar, oil, orange rind, milk, and all-purpose flour. You can also vary for mini cakes and use milk, eggs, softened butter, orange (or vanilla if you don’t have orange) extract, and instant pudding mix. Top with cream cheese frosting and orange zest.

Here are some baking tips that can help you make a delicious orange blossom cake:

  • Use fresh ingredients, such as fresh oranges and fresh orange juice, to enhance the flavor of the cake.
  • Zest the oranges and rub the zest into the sugar to release the oils in the zest for more flavor.
  • Use a measuring spoon or the lid of your bottle when adding orange blossom water to avoid overdoing it.
  • Double up on the oranges and lemons for extra zestiness.
  • Use a microplane or zester to get as much zest out of your oranges and lemons, but avoid scraping the bitter white bit.
  • Whip the eggs and sugar until light and fluffy to create a light and airy cake.
  • Use a stand mixer or electric handheld mixer to make the cake batter.
  • Use a non-stick spray to prepare the cake pans.
  • Cool the cake in the pan for 5 minutes before removing it to a cooling rack.
  • Sprinkle icing powder on top of the cake instead of using sticky icing or frosting
